We are thrilled to collaborate with Refuel Restaurant & Bar at The Soho Hotel London (part of the Firmdale group) on a very special cocktail as part of their Nine Regions menu. From seasonal à la carte dishes to their 'Grape Britannia' wine list, Refuel believes in championing the best of English produce, and this new menu has been created with the same ethos in mind. Crafted exclusively with ingredients from the nine distinct counties, each cocktail tells a story of its region, blending local inspiration with creative mixology.

Kevin Fry, Food and Beverage Manager at The Soho Hotel's Refuel bar, said:
"Our Nine Regions menu was created to showcase what can be found across England. We work with many small producers, some making their products at home, and London gives us a platform to share and celebrate their stories and craftsmanship. The East of England cocktail is part of this menu. From the beginning, I knew I wanted to use The English Whisky, and being based in the heart of Norfolk, it felt like the natural choice. I originally planned a sour-style drink using their Smokey whisky, but after tasting The Norfolk PX, the idea changed completely. The PX became the star of the cocktail, with the Smokey whisky adding a subtle background note.

The final drink is a rich flip-style cocktail, ideal for after dinner or relaxed sipping, with a sweet, creamy texture, bold raisin flavours, and a warm nutmeg finish."
