Chapter 11 Cask Strength Tasting Notes

Nose: Quite savoury, douse of white pepper spiciness, grappa and peat. Hints of hot, spicy ginger (think Jamaica ginger cake) with both lemon and zest.

Taste: A creamy palate followed by a burst of dry oak, pepper and peat. Again, light fruits (lemon rinds) and vanilla. Very mouth watering on the sides of the tongue followed by savoury dry peat.

The finish is long with smoky spicy overtones. Think liquorice and pepper with more peat and lemon. Really holds onto the sides on the tongue with the citrus after the peat has gone.
