We at The English Whisky Co. mature some of our fine single malt whiskies in Pedro Ximenez Sherry Casks. These casks are full of beautiful rich dark sherry before we take delivery, so we decided to take the sherry as well as it is too lovely to leave behind. Since arriving at St. George's we added some of our single malt to it and left it in the casks to continue maturing. We believe that the resulting drink is a wonderful fortified wine, that makes a superb drink for many occasions. Our chairman prefers it chilled, our MD thinks it is lovely as a dessert wine. It is also glorious poured over ice cream. 700ml.

Having been impressed with your whisky beer I felt I had to try your sherry. Fantastic! To be fair my sherry experience has been limited to Harvey's & Croft but this is something else. It's easily as much fun trying to detect flavours with this as with a fine single malt. For me you have the sweet lightness of sherry but then an added complexity comes thorough which, for me was a smokey dryness to complement the sweetness. May I suggest the first glass be drunk as it comes on a clear palette with the second glass accompanied with some un salted nuts such as Brazil nuts. Another fine product from St. George's. Following on from the Whisky Beers. Norfolk Nog next!
