The Whisky Spirits- Chapters 1 - 4
As a new distillery we are in a unique position to offer our customers an opportunity to follow the production of a fine single malt whisky, peated and unpeated from conception, through to, well, indefinitely! For this reason we thought it would make easy reading to keep the development in chapters, so at various ages from 1 day old through to 40yr old we will give you the opportunity to taste how the whisky is maturing. Each new bottling will be a new chapter to the 'The Book'.

Chapter 1 - New Make Spirit.
This is the spirit straight from the stills. We add a little water to it and bottle it for you. Tastes like whisky, smells like whisky, and looks like water. The chapter 1 is unpeated,46%, BUY NOW |

Chapter 3 - 18month old Single Malt Spirit.
This spirit is starting to get its distinctive golden colour after 18months maturing in oak barrels. The chapter 3 is the result of our Chapter 1 maturing in Oak Bourbon Casks for 18months. We bottle it at between 40% - 46%alc. BUY NOW |
Chapter 4 - 18month old Single Malt Spirit - peated.
This spirit is starting to get its distinctive golden colour after 18months maturing in oak barrels. The chapter 4 is the result of our Chapter 2 maturing in Oak Bourbon Casks for 18months. We bottle it at between 40% - 46%alc. Remember this is the peaty version. BUY NOW

People have been asking us if these chapters should be kept, like some fine wines, to mature further. This is not the case with whisky, once out of the barrel the ageing process stops. All the chapters can be enjoyed now.
One of the most common questions we are asked at the distillery is “What is the best way to drink whisky?” The answer to this is very easy; the best way to drink whisky or unmatured spirit is however you want to. Either drunk on their own, with a little water or with cranberry juice, maybe even made into cocktails. Some customers have also reported back that chapter 1 and 2 are very good for steeping fruit in as it does not have any colour. We think the question that should be asked is “What the best way to taste whisky?” The answer to this must surely be NO ice, and plenty of room temperature water. Remember the stronger the whisky, the more water needed.
